I once had ordered lentil salad from a restaurant. I won’t name them, because my experience wasn’t stellar. However, this recipe inspired me to try it on my own.
Ingredients:
1 package steamed lentils
1 package of baby beets
English cucumber, diced
Cherry Tomatoes
Crumbled Feta cheese with herbs
Kalamata Olives, sliced or chopped
Fresh Mint
Thyme Honey Balsamic Vinaigrette
I will be honest, at first, I mixed everything together, except the tomatoes. However, the more you manipulate the lentils, the more “mushy” it gets. Its actually better to layer the ingredients (such as in the order of the list), then to mix or toss them with the dressing at the time you are serving it. You can even add salad greens to make it more hearty.
It can also be paired with grilled chicken, beef or lamb.
Because a lot of these are pre-packaged, there is little for prep and clean up.
Another quick and easy week of lunches, if you ask me.
